There is no requirement for completing the career on any specific difficulty so feel free to choose Easy. From there you can progress into a standard career season, comprised of 18 races. You will begin in MX2 class and will need to complete 2 introductory races. You should start the game in single player and go directly into career mode. You can skip races but note that you will earn no points and if you miss the target as a result, then you will need more events to reach the 100,000 fan target. Note that if you fail to reach the target, you will lose fans. Usually when you start with a new team you are tasked with a small target - 10 or 15 points but as you perform better, your team objective target increases. Winning gives you 25 points so the maximum on any event is 50 points. This requires you to earn more than a certain amount of points over the 2 races. This is accomplished by winning but more importantly by completing the team objective. Your main goal in the championship season is to earn fans.

I recommend completing one full weekend, then change to just qualifying and races until you have completed the Holeshot trophies. In the menu it states that if you choose just races you then can select one or two but in fact I believe this is an error as there seems to be no way to adjust that from the 2 race default.

Before entering each new event you can change the settings - there are 3 options full weekend (free run, qualifying and 2 races), qualifying and races only and just races. The free run and qualifying run are timed at 30 minutes but you can return to the pit and skip forward to the next step at any time.
